Idli is a south indian popular breakfast, Its usually done by steaming the batter and fermenting the lentils.Its usually served with chutney or sambhar.
Ingredients :
2 cup par boiled rice
1 cup urad dal
1 tsp fenugreek seed
Method :
Wash and soak rice and dal seperatley.Soak for approximately for 10 hrs.Soak fenugreek along with the urad dal.Grind the urad dal into a smooth consistency,Then grind the rice into a coarse paste .Mix in both the batter together and let it ferment overnight or for 10hrs and then add in the salt.Now the batter is ready.Grease the idly plates with oil and pour a laddle of idly batter into it, and steam the idli for about 10 minutes,Remove from flame and allow it to cool for 5 minutes,Remove it from the mould and serve with chutney.

Neer Dosa

Neer Dosa is one of mangloreans delicacy....Neer means water in tulu,
It is prepared by soaking rice over nite and grinding it to a watery consistency,
Ing
Rice 1 cup soaked overnite,
salt 1 tsp
oil or ghee
Method ;
Soak rice overnite and grind it to a watery consistency,Heat a pan or a griddle, grease the pan with oil or ghee each time while making the dosa to prevent it from sticking to the bottom of the pan,Pour the batter and tilt the pan so that it spreads and gives a thin layer of dosa, close the lid and after few minutes remove from the pan and serve with chutney sambar, or fish curry

Vada

Well talking about the easy and quick recipes,this isnt that quick and requires a lot off effort to get it right... but worth a try...for all those who crave for south indian delicacy
Ing;
urad dal 1 cup (soaked over nite)
curry leaves few crushed
ginger 1 inch grated
crushed pepper corn 1 tsp
green chilles 2 chopped
salt to taste
oil for frying
water.
Method;
grind urad dal with very little water,(if to much water added then its difficult to make the vada) into a thick consistency, add in salt curry leaves peppercorn green chillies and ginger,mix well .
heat oil in a kadai...
take a bowl with water, dip your hand after making each vada to prevent hand from sticking,
Maka a ball, and slightly flatten it, inserting the small finger to make a hole,in between, fry the vada on both the sides, till golden brown,
Serve with sambhar or chutney

Rava Idli

This is the instant rava idli, made just an hour ahead...
Ing:
Rava 2cups
mustard 1tsp
hing pinch
oil 2tbsp
channa dal and urad dal 1 tsp
green chillies 2 chopped
dry red chilli 1
ginger (grated ) 1 tsp
curry leaves few
eno fruit salt 2tsp
curds 1 cup
water 1cup
salt to taste
cilantro for garnish
Method:
Add a little oil, then add in the mustard seeds, hing , the dals, and whole dry chillies, stir till dals turn golden colour, add in the rava and saute till it gives nice aroma, turn of the heat and cool down.
In a bowl add in the curds green chillies, ginger, salt, curry leaves and cilantro and mix well then add it to the rava mixture, and in water little by little to avoid lumps and have a idli consistency, then add in the eno fruit salt, (at last)
then boil water in the idli steamer and grease the plates and pour in the mixture, and steam for about 15 mins...Remove ,cool down and serve with chutney.

Frittata

This being one of the quickest and easiest dish, works well when u have all the little left over vegetables, which you really dont know how to clear it :)
and also good for children because i believe this is one of the nutritious and healthy balanced food....
Ing:
vegetables : i used ( spinach, capsicum, mushroom, thinly sliced potatoes,) can add more of your choice.
cheese (grated) 3 tbsp
eggs 5
salt and pepper to taste
onions 1 finely chopped
tomato 1/2 chopped
cilantro few chopped
butter for greasing the pan
Method:
In a bowl beat the eggs well, and add in all the vegetables, can also add boiled chicken if required, season it with salt pepper, then add in the cheese onions and tomato, mix well then add in the cilantro,
Grease a pan with butter and add in the egg mixture to it, and bake in oven for about 15 - 20 mins, at 180 c...
Remove and once it cools done .Serve it in a plate..
Can be a side dish or a healthy breakfast served with bread.
