Bhuna Ghost

I ngredients

Mutton
onions  1 sliced lengthwise
ginger garlic paste   1tsp
whole garam masala(  cloves cinnamon shahi jeera bayleaves) 2 each
oil
salt to taste
spice powder
turmeric pd  1/2 tsp
corriander powder  1 tbsp
chilli pd 1 tsp
green chillies  2 slit
capsicum 1 optional
garam masala 1 tsp optional

                              Method :
             .Heat oil in the cooker and add the whole spice, add finely sliced onions till brown, then add salt, and ginger garlic paste stir well,till the raw smell disaaper, then add turmeric,green chillies, add mutton corriander and chilli powder, and  water, pressure cook  till half done.
           transfer to a bowl  and cook on a slow flame till the moisture evaporates. u can add garam masala if required at the end.Serve with rice or chappati or roti

Spicy mutton curry


This is an excellent spicy mutton curry, which can be done with coconut, or without it....which can be eaten with parathas or rice, so my recipe is basically without the coconut, to make it much easier,

  • Mutton 500 gms
  • onions 2 finely chopped(if u need more gravy u can add 1 more)
  • tomatoes 2 finely chopped
  • ginger garlic paste 2 tbsp
  • oil
  • whole spice:
  • bay leaves 2
  • cloves 4
  • cinnamon stick 1 inch
  • fennel seed 1tsp (optinal)
  • star anise 1 (optinal)
  • peppercorn 4-5

  • Spice powders
  • turmeric powder 1tsp
  • red chilli powder 2 tbsp(depending on the spice required)
  • corriander powder 2tbsp
  • Salt to taste
  • curry leaves few
  • corriander leaves for garnish
Method:
Heat oil in a kadai ,add in the onions and cook till they become soft, then add in the tomatoes and cook till they mash well, make a fine paste of it and keep aside.
Heat oil in a pressure cooker, and add in the whole spice and curry leaves fry for a minute, then add in the onion -tomato paste, cook for about 2 minutes, the add in the ginger garlic paste and fry till the raw smell disappear,then add in the mutton and xook for about 5 mins,add in all the spice powder to the mutton,cook for another 5 minutes ,then add in half a cup of water,stir well, close the lid and cook till the mutton is done, it requires atleast 4 whistles, remove from the heat and garnish with corriander leaves.
Note : if done with coconut, dry roast it and make a paste with the onion and tomatoes.
