Veg Pulao


To begin with, i always prefer my pulao to be on the mild side, not much of spices,best for kids, and healthy as well!!!!!

Ing ;
Basmathi Rice 2 cups
mixed vegetables 1 cup
(carrot beans peas potato capsicum,)
whole spices 3 each
(star anise, elaichi, cinnamon bay leaves, peppercorn)
corriander leaves and mint handful
onions 2 sliced
greenchillies 2 to 3 slit
ginger garlic paste 1 tsp
tomato 1 chopped
spice powder 1 tsp each
(turmeric, corriander jeera powder)
curds half cup
oil and ghee 2tbsp
salt to taste
water 4 cups
Method;
Heat oil and ghee in a cooker, add in the whole spice, and saute for a while till nice aroma comes, then add in the onions, green chillies corriander and mint leaves , saute till onions turn golden brown.Note; i havent added chilli powder so based on the spice green chillies can be added.then add in the ginger garlic paste,saute till the raw smell disappear,then add in the toomato, mixed vegetables, all the spice powder, and salt,close the lid and cook till the vegetables are half cooked, on a medium heat, add in the curds and mix well,then add in the rice and water ,adjust salt to taste, close the lid and pressure cook for 2 or 3 whistle, Serve with Raitha.
