Quick and Easy Chocolate Cake
I truly dedicate this to my little one,
Ingredients
All purpose flour 1 n half cup
refined oil 1 cup this makes the cake glossy
castor sugar 2 cups
coco powder 1 cup
warm milk 1 cup
eggs 2
baking powder 1 tsp
baking soda 1 tsp
vanilla essence 1 tsp
salt a pinch
Method
Mix in all the dry ingredients and keep aside
In a bowl add in the egg milk and mix well till light and fluffy, and in the vanilla essence and mix well then add in all the dry ingredients mix well till well combines, and at the last add in the refined oil mix well ,You can add nuts if you like, and bake the cake at 375 degree for about 50 mins to 1hr
Note while adding warm milk to the egg make sure to keep adding little by little and mixing quickly, otherwise the eggs would be scrambled.
Serve with cream.
Christmas Fruit Cake
This has been one of the best christmas gift last year, to all my loved ones...
Ingredients
Dried fruits such as raisins cranberries almonds hazelnuts prunes, dates soaked in rum for couple of hrs,
for best flavour soak it and keep 3 months ahead, which i did .
All purpose flour 2cups
baking powder 1 tsp
butter 2 sticks
icing sugar 2 n half cup
eggs 3
cinnamon powder 1 tsp
ginger powder 1 tsp
nutmeg powder 1 tsp
vanilla essence 1 tsp
Caramel Sauce
sugar 6 tbsp
lemon juice few drops
water 3tbsp
Method
For the caramel sauce
Add the sugar n water let it heat till the sugar melts and gives a caramel colour to it, do not stir, during the process once the sugar is caramalized add a few drops of lemon juice to prevent it from crystalizing. Let it cool.
Cake
Mix in the flour with all the dry ingredients and keep aside.
In a bowl add in the butter and sugar stir well to a smooth mixture, then add in the egg yolks one at a time,mixing well, then add in the vanilla essence and all the dry ingredients ,In a seperate bowl mix in the egg whites till its stiff and add it to the cake batter lastly add in the dried fruits soaked in the rum and the caramel sauce mix well ,Pre heat the oven to 200 degree and bake for an hour...
top it with icing sugar for garnish.....
serve with whipped cream.

Chocolate Muffin
Ingredients :
2 eggs1 cup (220 g) sugar
1 cup (110 g) all-purpose flour
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon vanilla essence
2/3 cup (160 ml) milk
2/3 cup (150 g) butter
4 oz (120 g) semisweet chocolate chips (optional)
Method
Preheat oven to180 deg C
Grease 6 extra large muffin tins or cups (paper muffin bake cups are recommended) or 12-15 medium cups.
Beat the eggs with sugar, mix with flour, cocoa powder, baking powder, vanilla and milk.
Fold in the melted butter.
Add chocolate chips; coat them with flour before mixing into the batter.
Bake at 180 degrees until a until a wooden pick inserted in center comes out clean, about 30 to 40 minutes
The Chocolate Muffins may be served hot or at room temperature.
Chocolate muffins can also be served with whipped cream or vanilla ice cream.

Mixed Fruit Muffin

I really dint know what to call this...and finally decided on the mixed fruit muffin, because thats what it is all about
Ing
butter 230gms (room temp)
eggs 2
sugar 250gms
vanilla essence 1 tsp
self raising flour 300 gms
mixed fruit juice 1 cup
lemon juice 2 tsp
plums chopped into chunks 1 cup
Method
Beat the egg sugar and the vanilla essence till it becomes fluffy,then add in the butter and mix well, gradually start adding the flour little by little mix till well combined, then add in the juices and the chopped plums, grease the muffin tin and pour the cake batter,Pre heat oven at 150 c for 10 mins, then bake the muffins for 30 to 35 mins,AT 180 C, remove from oven leave the muffins to cool and serve.

Pineapple Upside -down cake

This being one of my favourite cake!!!easy to make, taste good...and last but not the least...its quick....
Pineapple being my favourite ,blens well with the cake, sweet and sour, and taste of rum....
200 g butter
100g light muscovado sugar
2tbsp dark rum
400g can of pineapple rings
50 g unsweetened desiccated coconut
200gms caster sugar
2 large eggs
175 flour
1tsp baking powder
2tsp vanilla extract
125 ml milk
Make the topping :
Turn the oven to 180 c and butter six ramekin dishes.Put 100g of the butter with the muscovado sugar and rum in the saucepan and cook for couple of minutes, till the sugar is melted.carefully pour a little mixture into the bottom of each ramekins then place the pineapple rings.
To make the cake :
Cook the coconut over a gentle heat atirring often until it begins to turn light golden brown, remove from heat and cool. Mix the coconut and the remaining butter caster sugar egg flour baking powder vanilla extract and milk until they are well combined. Spoon over the pineapple slices ,place the ramekins on the baking tray and cook in the oven for 20 minutes until well risen.

Coconut Cookies...

I did try cookies for the first time.....and to my suprise. they turned out excellent...I always felt cookies need a lot of hard work....but it just takes 20 minutes....
Makes about 30 cookies
250 g butter,softened
140g, caster sugar
1 egg yolk
2 tsp vanilla extract
300g plain flour...
100g desicatted coconut.
Strawberry or any jam for garnish
These are the ingredients for the basic dough for cookies.....you can add in chocloate chips or anything for the flavoured cookies...
Mix the dough ; mix the butter and sugar in a large bowl with a wooden spoon.Add the egg yolk and vanilla extract and briefly beat to combine.Sift over the plain flour and mix until well combined...add in the coconut to the mixture.Scoop out spoonful and roll into small size ball in your hands, then spread out over a baking tray,with your thumb gently press a dip in the centre of each cookie, then fill the thumbprints with a little jam, i used mermaid jam,
Bake for 12- 15 mins then transfer to a wire rack to cool
