Coconut Cookies...

I did try cookies for the first time.....and to my suprise. they turned out excellent...I always felt cookies need a lot of hard work....but it just takes 20 minutes....
Makes about 30 cookies

250 g butter,softened
140g, caster sugar
1 egg yolk
2 tsp vanilla extract
300g plain flour...
100g desicatted coconut.
Strawberry or any jam for garnish

These are the ingredients for the basic dough for cookies.....you can add in chocloate chips or anything for the flavoured cookies...

Mix the dough ; mix the butter and sugar in a large bowl with a wooden spoon.Add the egg yolk and vanilla extract and briefly beat to combine.Sift over the plain flour and mix until well combined...add in the coconut to the mixture.Scoop out spoonful and roll into small size ball in your hands, then spread out over a baking tray, with your thumb gently press a dip in the centre of each cookie, then fill the thumbprints with a little jam, i used mermaid jam,
Bake for 12- 15 mins then transfer to a wire rack to cool
